Tiki Drinks-Lesson 1

So, in preparation for a nice long Thanksgiving weekend, I spent some time making my own mixers to use in Tiki drinks starting tomorrow.  Starting with my Tiki+ iOS app from Jeff “Beachbum” Berry, I searched for some drinks to start with and the Jet Pilot caught my eye.

Two things I needed were cinnamon-infused sugar syrup and falernum.

The Tiki+ app had a recipe for the cinnamon-infused sugar syrup…crushed cinnamon sticks, sugar and water…bring to a boil, simmer for two minutes, let sit for 2 hours, then strain out the cinnamon sticks and pack it in a bottle.  Here a pic of the pot on the rangetop…the smell was amazing.

The falernum was slightly more complicated.  After some searching online, I found a couple recipes that I used to guide me, but I ended up improvising a bit based upon the ingredients that were available.  My concoction is as follows:

  • 8 oz of Flor de Caña Extra Dry rum
  • a handful of cloves
  • a whole nutmeg
  • zest of 4 limes
  • zest of 1 lemon
  • about 1/2 cup of julienned ginger

The cloves and nutmeg were toasted to bring out the aroma and flavor, then everything was added to the rum.  It is sitting on the counter infused the flavors into the liquid until tomorrow.  In the morning, I will strain the mixture into about 1-1/2 cups of simple syrup.

    I have been doing quite a bit of experimenting with making my own syrups lately too. I have made cinnamon syrup, passion fruit syrup, and grenadine. They have all turned out really great! Your falernum sounds great. Let us know how it turned out!

    Hi Damon, The Falernum was very tasty and the cinnamon syrup turned out great as well. All in all my Jet Pilots were very good. I’ll continue to experiment with new drinks and mixers as time permits! Cheers and Happy Holidays!
